I looked for setting in Gmail but could not find any area to change the font face, color and size and set those changes as default... has anyone done it?
It is just boring for me to have to do it every time I type an email.

You can change the default font and color in windows. Open up the control panel from the start menu and select system. Open up the themes tab and set your preferences there.
